What Is Pork Shoulder Capicolla?

Pork shoulder capicolla, sometimes called pork butt or capicola, comes from the upper portion of the pork shoulder. Despite its name, pork butt does not actually come from the back of the animal. It is a shoulder cut known for its generous marbling and rich, savoury flavour.

The combination of meat and natural fat makes capicolla especially versatile. The marbling helps keep the pork juicy during cooking, while the whole-muscle structure makes it suitable for roasting, braising, smoking and even slicing into steaks.

Canadian pork resources also highlight capicola as a versatile shoulder cut that can be prepared using methods including BBQ, grilling, pan-frying, braising and oven roasting.

Why You'll Love Pork Shoulder Capicolla

There are plenty of reasons to add this cut to your next meat order.

Rich natural flavour: The generous marbling gives pork shoulder capicolla a deep, savoury taste.

Tender results: Cook it properly and the meat can become wonderfully tender and juicy.

Incredibly versatile: Roast it whole, smoke it, braise it, turn it into pulled pork or experiment with homemade charcuterie.

Perfect for batch cooking: A 5–6 lb portion can provide plenty of leftovers for sandwiches, tacos, bowls and weeknight meals. Farm2Fork lists this cut as ideal for pulled pork, roasts, stews and other hearty dishes.

Slow-Roasted Pork Shoulder

One of the easiest ways to enjoy pork shoulder capicolla is with a simple slow roast.

Season the pork generously with salt, pepper, garlic, rosemary and thyme. For extra flavour, add smoked paprika, onion powder or a little brown sugar to create a savoury-sweet crust.

Roast uncovered at approximately 325°F (160°C) until it reaches a safe internal temperature, then allow the meat to rest before slicing. Ontario Pork's cooking guide lists capicola roasts among the shoulder cuts that can be roasted at 325°F, with cooking time depending on the size of the roast.

Serve thick slices with roasted potatoes, carrots and gravy for a classic Sunday dinner.

Turn It Into Pulled Pork

Pork shoulder capicolla is also an excellent choice for pulled pork. Season the roast with your favourite BBQ rub, then cook it low and slow until it is tender enough to shred.

Once cooked, pull the pork into pieces and toss it with your favourite BBQ sauce. Serve it on toasted buns with coleslaw, or use it to make tacos, quesadillas, loaded baked potatoes or BBQ pork bowls.

The natural fat in shoulder cuts makes them particularly well suited to long, slow cooking, helping the meat stay moist as it becomes tender.

Try a Smoky BBQ Pork Roast

Have a smoker? Give your capicolla a smoky makeover. Rub it with a combination of paprika, garlic, black pepper, brown sugar and a touch of chilli powder. Smoke it slowly, then finish it with BBQ sauce or a simple glaze.

Pair it with grilled corn, potato salad and a fresh cabbage slaw for an easy backyard feast.

A Hearty Braised Pork Dinner

For cooler evenings, braising is another excellent option. Brown the pork first, then place it in a Dutch oven with onions, garlic, carrots and your choice of stock or broth. Add herbs such as thyme and rosemary and cook gently until tender.

The result is rich, comforting pork that can be served with mashed potatoes, rice or crusty bread.

One Cut, Plenty of Possibilities

The real appeal of pork shoulder capicolla is its versatility. It can become the centrepiece of a traditional roast dinner, a smoky BBQ favourite, tender pulled pork or a comforting braised meal.

Whether you're planning a weekend gathering or simply want to stock up on versatile pork for easy family meals, this flavourful cut gives you plenty of ways to change up dinner.

With its rich marbling, whole-muscle texture and range of cooking possibilities, pork shoulder capicolla is one cut that's worth getting creative with.
